This is a quick raw vegan recipe that is deliciously thick and creamy. What I love about this recipe is that it is made from Avocado! Yummy way to get in a daily serving of some healthy fats.   Ingredients: 1/2 a Florida Avocado or 2 Haas Avocados (about 1 – 1 1/4 cups) 1 Banana 1/4 cup Cacao Powder 1/2 teaspoon Vanilla 1/4 teaspoon Cinnamon Pinch of Salt 2-3 Tablespoons sweetener of choice depending on your taste (Maple, Honey (non Vegan), or Agave) or try it with about 1/4 cup of softened dates instead 2-3 Tablespoons non-dairy milk as needed for blending Blend everything in a high speed blender till smooth and enjoy! These small chocolaty bites are quick and easy make and oh so good!     1/2 a banana mashed 3 Tablespoons Peanut Butter (I used the crunchy one, you can use any kind of nut butter you have on hand) 1 Tablespoon Almond Milk 1 Tablespoon Honey or Maple 1 Teaspoon Vanilla 1 Cup Almond Flour 1/4 Teaspoon Baking Soda 1/4 Teaspoon Sea Salt 1/4 Cup Chocolate Chips (I used the Enjoy Life Mini Chips) Mix together banana, peanut butter, almond milk, honey, and vanilla until well blended. In a separate bowl, mix together almond flour (meal), baking soda, and salt. Add the flour mixture to the wet ingredients and combine. Then fold in the chocolate chips. Happy Father’s Day to an amazing daddy and husband! What better way to celebrate than with one of his favorite cakes made by Junbug and I:) When we were dating, we used to frequent a cafe called Three Layers in Jacksonville. Not only was the atmosphere & people amazing, but the scent of freshly bakes cakes, toasted coconut & caramel filled the air when they made their German Chocolate Cake. Our version of the German Chocolate Cake is every bit as delectable, but a much healthier version… A guiltless guilty pleasure. Not only is this cake vegan, but gluten free and oil free as well. Having just bought 10 avocados from the store, we made a chocolate avocado cake which worked out perfectly moist & rich. So here is it… For The Chocolate Cake: 1 1/2 Cups Flour (we used a gluten free blend of about 1/2 c. + 1.5 tb. brown rice flour & sorghum flour, and 1/4 c.+1 tb tapioca flour) 3/4 Cup Cacao Powder 3/4 tsp Baking Soda 1 tsp Baking Powder 3/4 tsp Salt 1 Haas Avocado 1 Cup Maple Syrup 3/4 Cup Coconut Milk 2 tsp Vanilla Sift all the dry ingredients together and set aside. In the bowl of a mixer, beat avocado till creamy. Gradually add in maple syrup & vanilla while scraping down the sides of the bowl. Alternately add dry mixture and coconut milk. Give the oven a rest and try making a fresh raw apple pie with just a food processor. It has all the refreshing flavors of a traditional apple pie without the refined sugars. Healthy fats and fresh fruit, what more could you want from a dessert? Crust: 1 cup pitted dates 1 cup walnuts 1/3 cup unsweetened shredded coconut ½ tsp nutmeg ½ teaspoon ground cinnamon ¼ teaspoon sea salt Filling: 1 whole orange, juiced 1 cup dates 2-3 teaspoons peeled ginger root, grated 1 ½ teaspoon ground cinnamon 2 teaspoon pure vanilla extract Juice of 1 lemon 4 large Fuji apples, peeled, cored and thinly sliced 2 tablespoons ground flax seed ¼ cup unsweetened shredded coconut (optional) Directions: Soak dates in orange juice. Add crust ingredients into the bowl of a food processor; blend to form a sticky paste. Spoon the mixture into 8-inch spring form; press over the bottom and up the sides to form the crust. Set aside. For the filling, place the dates soaked in orange juice, ginger, cinnamon and vanilla in the bowl of a food processor. Pulse for a few seconds. Place sliced apples in a medium bowl and add lemon juice, and then filling mixture to the bowl. Toss to coat completely. Transfer apple-mixture to prepared crust. Let pie rest for at least 2 hours to help soften the apples. Sprinkle with coconut before serving....
