In my opinion, this cashew based sour cream is way better than the diary one! It is also versatile, try adding in herbs like cilantro…perfect for topping off tacos:) This recipe works best with a high speed blender. If you don’t have one, make sure you soak your cashews overnight. The cream may not be as smooth without a high speed blender.

It’s a rainy Sunday morning…perfect for pancakes! My Junbug requested simple plain pancakes, so here it is. Coconut Spelt Pancakes – Simple, soft & delicious. He had his with raspberries, bananas, Cacao Nibs and some peanut butter. Mine with bananas, raspberries, kiwi, hemp seeds, chopped nuts and a touch of honey.
