Date Balls

I can’t believe Back to School is already here! Seems like the summer just flew by. Try these sweet treats for a healthy lunchbox snack. Junbug loves making them with me.


  • 1 cup pitted dates, packed
  • 1/3 cup fresh squeezed orange juice
  • 1 1/2 cup Almonds
  • 1 banana
  • 1 tsp vanilla
  • 1 tsp grated ginger
  • Pinch of Salt
  • Optional: Hemp Seeds, Coconut, or Cacao for rolling

Soak the dates in orange juice to soften while you gather the rest of the ingredients. Pulse almonds in food processor until you almost have a fine crumb.  Leaving a few bigger chunks leaves a nice texture. Empty almonds into a bowl. Drain the dates and add to the food processor and pulse till you have a paste. Add in the rest of the ingredients and pulse till everything comes together. Mix date mixture into almonds. Roll into balls using a tablespoon to gauge how much to use for each ball. Then roll balls into desired coating. My favorite is the hemp and Jun’s favorite is the coconut!

Makes about 22-24 balls…that is, if you don’t eat it first. I think we ate a third of the mixture before we rolled the balls.
